Muffin passion

Hi everybody!

How are you doing? Today I would like to share with you a recipe that I’ve recently learnt, very basic and quick: muffins. I have made them with chocolate drops and pears (you know it’s one of my favourite matchings! 😀 ) , but you can make them with whatever you like, like totally chocolate (adding a bit of cacao powder) or red fruits, or apples..whatever! In fact, what I like about them is that they’re like one-portion cakes, which you can have for breakfast or to complete a light meal. They’re very handy 🙂 and light as well (just a small amount of butter, for my health freak friends 😀 ) .

I’ve taken part of the recipe from a cooking book, written by Gambero Rosso chefs, which in Italy are very important and guarantee of quality. If I were you, I would give it a try, it is worth it! I know that the original recipe would probably be American, but I decided to look for the Italian version, because usually is more similar to my taste (not too buttery) and also because I have grown with Gambero Rosso books, my mother has always bought them and considered them as the Bible!

Are you ready to cook?

  • Key ingredient: chocolate, pears (or the ingredients you like!)
  • Time needed: 10 mins for mixing the ingredients + 25-30 mins of baking
  • Perfect occasion: Breakfast
  • Serves: 12 (or yourself for a week 😀  to my view a “human” portion is 1 and 1/2 muffin per person)

So, first of all:

Preheat the oven at 190°C

Let’s mix together the dry ingredients:

  • 250 g of ’00’ flour
  • 1\2 packet of instant yeast
  • 1 tablespoon of bicarbonate
  • 50 g of butter
  • 75 g of sugar
  • 100 g of chocolate chips
  • 3 pears                                                                                                                       

Sieve the flour through a small colander in a big bowl, add the yeast and bicarbonate and stir everything together. It should have the appearance of big crumbles, not very omogeneus (otherwise the muffin will result less soft). And you know what I discovered? I have learnt that there is a big difference between adding pan-melted butter and room temperature-melted one; in fact basically they can completely change the texture of the cake..and if you are baking something with fruit, if the butter is more liquid the result is that you’ll find the fruit falling to the bottom of the cake! OMG ! So let’s add the room temperature-melted butter 🙂

Now  add sugar and the chocolate chips, wash and dice three pears, add the to the mix and stir everything together.

Now let’s add the liquid ingredients:

  • 2 eggs
  • 1\4 l of milk

Whisk together the eggs and the quarter of milk, then add them to the crumbled mixture and stir everything..but not too much! Muffins are easy and don’t need too much care and attention, otherwise they will result less soft 🙂

Finish!

Let’s pour the mixture in the muffin tray, leaving 1/4 of space for the muffin to rise 🙂 as a beautiful sprout! Bake them in the pre-heated oven for about 25-30 mins, utill they are grown enough 🙂
